4 tbsp All-purpose flour
2 cups Chicken stock low-sodium, or vegetable stock
½ tsp Kosher Salt or more to taste
¼ tsp Black pepper

3 cups Broccoli florets or 1 large head, cut into small pieces
1 Carrots large, julienned or shredded
2 cups Half-and-half or milk or light or heavy cream
8 oz Cheddar cheese grated, or 2 cups

Whisk in the flour and cook until golden. Next, pour in the chicken stock and add the broccoli florets, carrots, paprika, salt and black pepper. Simmer for 15 minutes or until the broccoli and carrots are cooked through. Finally, add half & half and grated Cheddar and simmer for another minute. Serve with toasted crusty bread, and enjoy!

Sauté onions

In a Dutch oven or pot over medium-high heat, melt 4 tablespoons butter and add ½ a diced onion. Sauté, stirring occasionally, about 3-4 minutes or until softened and lightly golden.

Add garlic

Add 2 minced garlic cloves and cook for another minute.

Add flour

Add 4 tablespoons all-purpose flour and whisk for 1-2 minutes or until golden in color.

Add stock, broccoli, carrots, and seasoning

Gently pour in 2 cups chicken stock and add 3 cups broccoli florets, 1 grated carrot, ½ teaspoon salt, ⅛ teaspoon black pepper, and ¼ teaspoon paprika and bring to a boil. Once at a boil, reduce the heat to medium-low and simmer the soup for 15 minutes or until the broccoli and carrots are cooked through.

Add half & half and cheese

Stir in 2 cups half & half and 2 cups grated Cheddar cheese and simmer for another minute or until the cheese has melted. Taste and adjust the seasoning if needed.

Serve with toasted crusty bread, and enjoy!
