2 (15-oz) cans Garbanzo beans or chickpeas, rinsed and drained
3 Green onion chopped
½ cup Plain yogurt
1 tbsp Parsley fresh, minced
1 tbsp Orange marmalade
4 cups Spring mix salad greens

Looking for a new salad with chickpeas? Look no further! This Lemony Garbanzo Salad is it. Not only is it packed full of healthy ingredients, but it is also delicious. Chickpeas get tossed with flavorful lemon vinaigrette, served over mixed greens with herby orange marmalade yogurt sauce. Bonus? It is a no-cook recipe that takes about 5 minutes to toss together – too easy.   

Start with the lemon vinaigrette. Simply whisk together the lemon juice, olive oil, cumin, coriander, salt, and black pepper. Then toss the chickpeas and chopped green onions in the vinaigrette. This allows for the chickpeas to marinate and soak up all the rich vinaigrette flavors. Next, prepare the yogurt sauce. Serve the chickpeas over the mixed salad greens and drizzled with yogurt sauce. Make it vegan! Just sub dairy yogurt for non-dairy yogurt such as almond or soy.

Steps to make Lemony Garbanzo Salad

Prepare lemon vinaigrette

In a large bowl, whisk together ÂĽ cup olive oil, 3 tablespoons lemon juice, Âľ teaspoon ground cumin, ÂĽ teaspoon salt, ÂĽ teaspoon ground coriander, and ÂĽ teaspoon pepper.

Add chickpeas and green onions

Add in 2 cans rinsed and drained chickpeas and 3 chopped green onions and toss to coat well.

Prepare yogurt sauce

In another bowl, mix together ½ cup plain yogurt, 1 tablespoon minced fresh parsley, and 1 tablespoon orange marmalade.

Assemble

Divide 4 cups salad greens among 4 plates and top with chickpea mixture. Drizzle with the prepared yogurt sauce.

Serve immediately and enjoy!
