Chickpeas get tossed with flavorful lemon vinaigrette, served over mixed greens with herby orange marmalade yogurt sauce. Bonus? It is a no-cook recipe that takes about 5 minutes to toss together – too easy.  Â
Start with the lemon vinaigrette. Simply whisk together the lemon juice, olive oil, cumin, coriander, salt, and black pepper. Then toss the chickpeas and chopped green onions in the vinaigrette. This allows for the chickpeas to marinate and soak up all the rich vinaigrette flavors. Next, prepare the yogurt sauce. Serve the chickpeas over the mixed salad greens and drizzled with yogurt sauce. Make it vegan! Just sub dairy yogurt for non-dairy yogurt such as almond or soy.
