Ingredients

2 lbs Zucchini ends cuts off
8-oz Red bell pepper stemmed, seeded and cut in half
1/2 lb Sweet onions end cut off, peeled and cut in half
8 oz Mushrooms cleaned
1 tsp Cumin
1 tsp Chipotle powder
1 tsp Chili powder
Sea salt to taste
3 tbsp Avocado oil
For serving:
Guacamole to taste
1 Lime cut into quarters

This fresh take on fajita noodles is fully loaded with bell pepper, sweet onion, mushrooms, and zucchini noodles, aka zoodles. No wheat, no gluten, no regret. Just a fast and healthy dinner idea for hungry, busy people. 

This one-pan dish is infused with flavorful cumin, chipotle and chili powder. I like to serve these fajita zoodles with a batch of homemade guacamole and lime wedges for squeezing over. Why choose between Tex-Mex and low-carb when you don’t have to? This is a perfect weeknight dinner. Healthy, colorful, and beyond good. Enjoy!  

To make the Veggie Fajita Zoodles, you will need the following ingredients:

Steps to make Veggie Fajita Zoodles

Make zucchini noodles

Spiralize the zucchini or use a julienne peeler to make zucchini noodles.

Prepare vegetables

Cut the red bell pepper halves into ÂĽ-inch strips. Slice the onion halves into ÂĽ-inch half moons.

Slice mushrooms

Slice 8 ounces mushrooms into ÂĽ-inch slices.

Mix spices

In a small bowl, mix together 1 teaspoon cumin, 1 teaspoon chipotle powder, 1 teaspoon chili powder, and sea salt to taste.

Cook vegetables

In a large skillet over medium-high heat, heat 3 tablespoons avocado oil and add onions and bell pepper. Sauté until the vegetables are softened.

Add mushrooms

Add the sliced mushrooms and spice mixture and cook until the mushrooms start to soften.

Add zucchini noodles

Turn the heat to high and add the spiralized zucchini. Cook the zucchini, using a pair of tongs to toss until they just begin to wilt but still have a bit of texture.

Serve

Serve immediately with guacamole and lime wedges. Enjoy!
