To make the Veggie Fajita Zoodles, you will need the following ingredients:
Spiralize the zucchini or use a julienne peeler to make zucchini noodles.
Cut the red bell pepper halves into ¼-inch strips. Slice the onion halves into ¼-inch half moons.
Slice 8 ounces mushrooms into ¼-inch slices.
In a small bowl, mix together 1 teaspoon cumin, 1 teaspoon chipotle powder, 1 teaspoon chili powder, and sea salt to taste.
In a large skillet over medium-high heat, heat 3 tablespoons avocado oil and add onions and bell pepper. Sauté until the vegetables are softened.
Add the sliced mushrooms and spice mixture and cook until the mushrooms start to soften.
Turn the heat to high and add the spiralized zucchini. Cook the zucchini, using a pair of tongs to toss until they just begin to wilt but still have a bit of texture.
Serve immediately with guacamole and lime wedges. Enjoy!
