To make this stuffing, start by tossing butternut squash chunks with olive oil, garlic and thyme. Season with salt and pepper before scattering bacon over the top. Bake in the oven until the squash is tender and the bacon is cooked through. Remove the skillet from the oven and sprinkle the top with mozzarella and Parmesan. Return to the oven and bake until the cheese is melted. Serve warm, garnished with freshly chopped parsley.
To make Keto Cheesy Bacon Butternut Squash Dressing, you will need the following ingredients:
Preheat the oven to 425 °F.
Toss butternut squash chunks with 2 tablespoons of olive oil, 2 cloves of garlic and 2 tablespoons of thyme in a large baking dish or ovenproof skillet.
Season the squash with salt and pepper to taste.
Scatter ½ a pound of bacon over the top.
Place the skillet in the oven and bake for 20-25 minutes until the squash is tender and the bacon is cooked through.
Remove the skillet from the oven and sprinkle 1½ cups of shredded mozzarella and ½ a cup of freshly grated Parmesan. Return to the oven and bake for 5-10 minutes more until the cheese is melted.
Serve warm garnished with chopped fresh parsley.
