3 cloves Garlic crushed
750 g Ground beef
½ cup Frozen peas
1 Eggs lightly beaten
¾ cup Bread crumbs dried
¼ cup Barbecue sauce
¼ cup Tomato sauce
¼ cup Parsley fresh, leaves, chopped
Salt to taste
Black pepper to taste
To serve:
Gravy
For mashed potato topping:
750 g Potatoes peeled and chopped
50 g Butter chopped
¼ cup Milk
¼ cup Cheddar cheese grated
Salt to taste

Cook onion and garlic

In a small pan over medium-high heat, heat 1 tablespoon olive oil and add 1 finely chopped onion. Sauté for 5 minutes or until softened, then add 3 crushed garlic cloves and cook, stirring, for 1 minute more. Remove from the heat and set aside to cool for 10 minutes.

Boil potatoes

Meanwhile, in a pot of boiling salted water, cook 750 grams chopped potatoes until tender, about 12-15 minutes.

Make mashed potatoes

Drain and return to the pot over low heat. Add in 40 grams chopped butter (reserving 10 grams for topping) and ¼ cup milk. Using a potato masher, mash until smooth. Then stir in ¼ cup grated Cheddar and season to taste.

Heat oven and prepare a loaf pan

Preheat the oven to 355 °F and grease an 8x4-inch loaf pan. Line the bottom and sides with parchment paper, allowing 2 inches overhang on each side.

Make meatloaf mixture

In a large bowl, place 750 grams ground beef, ½ cup frozen peas, 1 egg, ¾ cup dried bread crumbs, ¼ cup barbecue sauce, ¼ cup tomato sauce, ¼ cup chopped fresh parsley leaves, and onion-garlic mixture. Season with salt and black pepper to taste. Mix all the ingredients together until fully combined.
