½ Sweet onions medium, diced
Kosher Salt to taste

1 lb Lean ground beef
1 cloves Garlic minced
½ tsp Dried thyme
3 tbsp All-purpose flour
¼ cup Dry white wine
4 cups Beef stock
2 tbsp Worcestershire sauce
1 tbsp Dijon mustard
8 oz Fusilli pasta uncooked
½ cup Sour cream
2 tbsp Parsley chopped fresh leaves

You’re probably aware by now that I am a big fan of one-pot meals. This One Pot Ground Beef Stroganoff recipe is no exception! Made with ground beef rather than beef pieces this is a winner! The noodles cook in the sauce, too, meaning less washing up after the meal!

Start by sauteing mushrooms and onion. Once browned, add ground beef and crumble while cooking. Stir in garlic and thyme until fragrant. Whisk in flour that will thicken the sauce before adding wine and scraping any browned bits from the bottom of the skillet. Pour in beef stock, Worcestershire sauce, Dijon mustard and pasta. Bring to a boil and simmer until the pasta is cooked through. Before serving, add sour cream and garnish with freshly chopped parsley.

Steps to make One Pot Ground Beef Stroganoff

Cook mushrooms and onion

Place 2 tablespoons of butter in a large skillet or frying pan over medium heat. Add 12 ounces of mushrooms and ½ a diced onion and sauté for 3-5 minutes. Season to taste with salt and pepper.

Cook ground beef

Add 1 pound of ground beef to the pan. Cook while crumbling for 3-5 minutes.

Add garlic and thyme

Mix in 2 minced cloves of garlic and ½ teaspoon of thyme. Stir for about 1 minute until fragrant.

Add flour and wine

Stir in 3 tablespoons of flour and cook for about 1 minute, until lightly browned. Stir in ¼ cup of wine and use a wooden spoon to scrape any browned bits from the bottom of the skillet.

Cook pasta

Stir in 4 cups of beef stock, 2 tablespoons of Worcestershire sauce, 1 tablespoon of Dijon mustard, and 8 ounces of pasta. Season the mixture to taste with salt and pepper and bring to a boil. Cover the pan and reduce heat. Simmer for about 9-10 minutes until the pasta is cooked through.

Add sour cream

Stir ½ cup of sour cream through the pasta until it is heated through.

Serve

Garnish with parsley to serve.
