16 oz Mixed greens
1 cup Cherry tomatoes
½ Red onion medium, sliced
½ cup Olives green
¼ cup Pepperoncini sliced
½ cup Fresh mozzarella pearls
1 Red bell pepper divided to make a bow
1 cup Croutons
For dressing:
1 cup Mayonnaise light
¼ White onion
2 cloves Garlic
2 tbsp White wine vinegar
2 tsp Granulated sugar
1 tsp Dried Italian seasoning
¼ tsp Kosher Salt

Serve this festive Christmas Salad Wreath as a holiday appetizer or side dish. This salad is vibrant and delicious and can double as a table centerpiece. Bright and fresh, it is a colorful mix of greens, cherry tomatoes, bell pepper, red onion, green olives, pepperoncini, mozzarella pearls, and croutons combined with a creamy Italian-style dressing. Your guests will love the contrasting textures and flavors! Plus, this salad is easy and quick to assemble.  

Complete this holiday salad wreath with a bow using pieces of red bell pepper that you will add to the salad. To create the bow, use a sharp knife to cut off about ½ inch from the stem end of the bell pepper. Where the bell pepper has a section, make a slice from the outside to the stem and carefully pull the section away from the stem. Repeat to get two more sections. Use three sections to make the loops and the central part of the bow. Next, cut two ¼ inch strips from the remaining bell pepper for the ribbons. Place the red pepper bow on the bottom of the salad wreath, and you are ready to serve!

Steps to make Christmas Salad Wreath

Arrange mixed greens

In the middle of a large (about 18-inch) round rimmed platter or lazy Susan, place a small bowl for dressing. Arrange 16 ounces mixed greens around the dressing bowl.

Make bell pepper bow

Use a sharp knife to cut the top off about ½ inch from the stem end. Where the bell pepper has a section, make a slice from the outside to the stem and carefully pull the section away from the stem. Repeat to get two more sections. Use three sections to create the main bow. Slice two long strips of the bell pepper to make the ribbons. Set aside. Chop the remaining part of the red bell pepper.

Scatter remaining ingredients

Scatter 1 cup cherry tomatoes, ½ sliced red onion, ½ cup green olives, ¼ cup sliced pepperoncini, ½ cup fresh mozzarella pearls, chopped red bell pepper, and 1 cup croutons on top of the greens.

Make dressing

In a blender or food processor, combine 1 cup light mayonnaise, ¼ white onion, 2 cloves garlic, 2 tablespoons vinegar, and 2 teaspoons sugar and blend until smooth. Season with 1 teaspoon Italian seasoning and ¼ teaspoon salt or to taste.

Place dressing in bowl

Transfer the dressing to the bowl in the middle of the salad wreath.

Serve

Place the red pepper bow on the bottom of the salad wreath and serve!
