To make this couldn’t be easier. Start by caramelizing onions and cooking potatoes until soft. Mash the potatoes with butter, cream cheese, and milk. Season to taste. Sauté onion

Heat 2 teaspoons of olive oil in a medium nonstick skillet. Add ½ a chopped onion to the skillet and cover the pan. Cook, while stirring occasionally, until the onions are soft and golden brown. To stop the onions from burning while cooking, add a splash of water every now and again.

Cook potatoes

Place 3 pounds of halved potatoes in a large saucepan. Pour in cold water until there is 1 inch above the potatoes. Season with salt and bring to a boil. Simmer for 20-25 minutes. Cook until the potatoes are tender. Drain the potatoes and transfer to a large bowl.

Heat oven and prepare dish

Preheat the oven to 350 °F and lightly spray a baking dish with cooking spray.

Mash potatoes

Mash the potatoes using a potato masher or ricer until the mixture is as smooth as possible. Add 3 tablespoons of butter, 2 tablespoons of cream cheese and ½ a cup of milk. Continue to mash until fully combined and season to taste with salt and pepper.

Mix in the caramelized onions, crumbled bacon, and 1 tablespoon of minced rosemary.
