Churro Waffles

These Churro Waffles were inspired by a recent trip to visit a friend who lives in Mexico. In my friend’s home town, they party all night and it is traditional to get a snack of churros for the walk home after a night of dancing. Churros are a deep fried dough snack which are dusted with sugar and dipped into hot chocolate. I wanted to recreate the experience so decided to try using my waffle maker rather than deep frying dough in oil. 

Start by mixing the dry and wet waffle ingredients together to make waffle batter. Cook the waffle batter in a waffle iron until they reach your desired doneness – I love my crispy and golden. Transfer the cooked waffles to a warm oven until you are ready to serve. To serve, dust the waffles all over with cinnamon sugar and drizzle with chocolate sauce. Serve with optional whipped cream, hot fudge sauce or caramel sauce.

    Mix dry ingredients together

    Mix 2¼ cups of all-purpose flour, 4 teaspoons of baking powder, ¾ teaspoon of salt and 1½ tablespoons of sugar in a large mixing bowl.

    In a separate bowl, whisk 2 beaten eggs with 2¼ cups of milk and ¾ cup of melted butter.

    Pour wet ingredients into the dry ingredients

    Pour the wet mixture into the flour mixture and fold until the dry ingredients are just moistened.

    Heat a waffle iron

    Preheat a waffle iron.

    Pour the batter onto the hot waffle iron and cook the waffles until they reach your desired doneness. Transfer them to a 250 °F oven to keep warm until serving.

    Mix 1 tablespoon of cinnamon with ½ a cup of granulated sugar together in a bowl.

    Brush the cooked waffles on both sides with ¼ cup of melted butter. Dust all over with cinnamon sugar.

    Melt 1 cup of chocolate chips in a microwave in 30-second increments until completely melted.
