
These Gruyere, Mushroom & Caramelized Onion Bites make a delicious Christmas side dish or they are perfect to serve as a canapé at any party you might be hosting this year. This is right at the top of my list of favorite Christmas side dish recipes. Everyone in my family adores these tasty little bites.
To make these bites, start by sautéing mushrooms in oil and butter. Remove the mushrooms from the heat and sauté onions. Add sugar and leave the onions to caramelize slowly. Mix onions and mushrooms together. Add cheese and leave to cool to room temperature. Prepare the pastry by slicing puff pastry into squares. Make sure the puff pastry is cold when you top it with the mixture and before it goes into the oven. If the pastry is not chilled, it may not puff up when cooking. Bake the topped pastry squares in the oven until golden.
