In a large casserole dish or Dutch oven, heat the oil over medium heat. Sprinkle each piece of chicken with salt and black pepper and cook in the oil for 5-8 minutes until lightly browned all over.

Add the rest of the ingredients

Place the carrots, potatoes, celery, onion, garlic, chicken bouillon cubes in the pot. Pour in the water and stir well to combine.

Boil and cover

Bring to a boil and cover.

Cook in the oven

Place the dish into the preheated oven. Simmer the chicken for about 45 minutes with the cover on. You’ll know it’s cooked once the vegetables are tender.

Serve in a large bowl with some bread on the side to mop up all the tasty juices.
