250g Spelt Spaghetti
3 tbsp Olive oil extra virgin
6 sprigs Thyme of lemon thyme , divided
3 cloves Garlic minced
½ cup Bread crumbs coarse
5 tbsp Butter
250g Mushrooms button mushrooms, sliced thinly
¼ cup Parsley flat leaf parsley, chopped
¼ cup Parmesan cheese grated
Salt to taste
Black pepper to taste

Sometimes, I get tired of making the same pasta recipes I’ve been cooking for years so this Mushroom and Thyme Butter Spelt Spaghetti has made an exciting change to my usual pasta nights. Herby, garlicky mushrooms combine with spelt spaghetti to make a delicious midweek meal. 

To make this dish start by cooking the spaghetti in a large pan of boiling water. As the pasta cooks, cook thyme, garlic and bread crumbs in a pan with some olive oil. Remove from the pan and set aside. In the same pan, sauté mushrooms and thyme. Drain the pasta and mix with the mushrooms in the pan. Serve garnished with the fried bread crumbs.

Steps to make Mushroom and Thyme Butter Spelt Spaghetti


Cook spaghetti


Bring salted water to a boil in a large saucepan. Cook 250 grams of spelt spaghetti according to the package instructions.


Heat oil


Place 3 tablespoons of olive oil in a large skillet over medium heat.


Cook bread crumbs


Add 2 sprigs of thyme, 3 minced cloves of garlic and ½ a cup of bread crumbs. Cook for 3 to 5 minutes until the crumbs are browned and toasted. Season with salt & pepper to taste. Remove from the pan and set aside.


Melt butter


Place 5 tablespoons of butter in the same pan. Once the butter has melted, turn the heat down to medium until it starts to foam.


Cook mushrooms


Add the remaining thyme and 250 grams of mushrooms to the pan. Stir occasionally while cooking for around 3 to 5 minutes until the mushrooms are tender and browned. Season to taste with salt and pepper.


Add pasta to the mushrooms


Strain the spaghetti and add it to the pan along with the parsley and stir everything together.



Serve the spaghetti in pasta bowls, garnished with the crispy bread crumbs and Parmesan.
