
Sometimes, I get tired of making the same pasta recipes I’ve been cooking for years so this Mushroom and Thyme Butter Spelt Spaghetti has made an exciting change to my usual pasta nights. Herby, garlicky mushrooms combine with spelt spaghetti to make a delicious midweek meal.
To make this dish start by cooking the spaghetti in a large pan of boiling water. As the pasta cooks, cook thyme, garlic and bread crumbs in a pan with some olive oil. Remove from the pan and set aside. In the same pan, sauté mushrooms and thyme. Drain the pasta and mix with the mushrooms in the pan. Serve garnished with the fried bread crumbs.
