This recipe for Vegan Sloppy Joes is a delicious lentil based dish which is crammed with nutritious ingredients and delicious flavors. These sloppy joes literally have all the flavor of the traditional meat based recipe. Add toppings like pickled onions and hot sauce and you won’t even miss the meat.

While you cook the lentils, make the sloppy joe sauce. Start by dicing pepper and onion and mincing garlic. Fry the bell pepper and onion and cook until the onions are translucent. Add the garlic, vegetable broth, ketchup, Worcestershire sauce, mustard powder, onion powder, and chili powder. Simmer until thickened. Once thickened, add the lentils to the sauce and cook on low heat for about 5 minutes. Remove from the heat and add the remaining ketchup, Worcestershire sauce and kosher salt. Serve in little whole wheat buns.

    Place 2 cups of lentils in a large saucepan with 3 cups of the vegetable broth, 2 cups of water and ½ a teaspoon of kosher salt. Bring the contents of the saucepan to a rapid simmer. Reduce the heat and continue to simmer uncovered for about 20-25 minutes, until the lentils are tender but still hold their shape. Drain the excess liquid from the lentils.

    In a separate saucepan, heat 2 tablespoons of olive oil over medium high heat.

    Add the bell pepper and onion to the oil and cook for 5 minutes until the onions are soft and translucent. Add 4 minced cloves of garlic and cook for 1 minute.
