Ingredients

2 cups Lentils brown or green
1 quart Vegetable broth divided
1 tsp Kosher Salt divided
½ Green bell pepper diced
1 Onion medium, diced
4 Garlic clove minced
2 tbsp Olive oil
1 cup plus 2 tbsp Ketchup organic, divided
2 tbsp plus 1 tsp Worcestershire sauce vegan, divided
1 tsp Mustard powder
1 tsp Onion powder
1 tsp Chili powder
To serve:
Hot sauce to taste
Pickled onions
Bread and butter pickles
8 Whole wheat buns vegan & gluten-free as desired

This recipe for Vegan Sloppy Joes is a delicious lentil based dish which is crammed with nutritious ingredients and delicious flavors. These sloppy joes literally have all the flavor of the traditional meat based recipe. Add toppings like pickled onions and hot sauce and you won’t even miss the meat.

While you cook the lentils, make the sloppy joe sauce. Start by dicing pepper and onion and mincing garlic. Fry the bell pepper and onion and cook until the onions are translucent. Add the garlic, vegetable broth, ketchup, Worcestershire sauce, mustard powder, onion powder, and chili powder. Simmer until thickened. Once thickened, add the lentils to the sauce and cook on low heat for about 5 minutes. Remove from the heat and add the remaining ketchup, Worcestershire sauce and kosher salt. Serve in little whole wheat buns.

Steps to make Vegan Sloppy Joes

Cook lentils

Place 2 cups of lentils in a large saucepan with 3 cups of the vegetable broth, 2 cups of water and ½ a teaspoon of kosher salt. Bring the contents of the saucepan to a rapid simmer. Reduce the heat and continue to simmer uncovered for about 20-25 minutes, until the lentils are tender but still hold their shape. Drain the excess liquid from the lentils.

Heat oil

In a separate saucepan, heat 2 tablespoons of olive oil over medium high heat.

Make sauce

Add the bell pepper and onion to the oil and cook for 5 minutes until the onions are soft and translucent. Add 4 minced cloves of garlic and cook for 1 minute. Add the remaining vegetable broth, 1 cup ketchup, 2 tablespoons of Worcestershire sauce, and 1 teaspoon each of mustard powder, onion powder, and chili powder.

Cook for 5 minutes

Simmer for 5 minutes until the sauce thickens.

Add the lentils

Once the lentils are cooked, add them to the sauce. Simmer over low heat for about 5 minutes.

Add remaining ingredients

Remove the saucepan from the heat and add the remaining 2 tablespoons of ketchup, 1 teaspoon of Worcestershire sauce and ½ a teaspoon of kosher salt.

Serve

Serve on whole wheat buns with pickled onions and pickles, drizzled with hot sauce.
