This Mushroom Pâté is a wonderful alternative to usual protein pâtés such as chicken or duck livers, for example. A delicious combination of roughly chopped mushrooms, finely chopped shallots, garlic, salt, freshly ground pepper, fresh rosemary, and ricotta cheese.

Cook mushrooms

In a large sauté pan over medium heat, heat 2 tablespoons of oil then add 1 pound of roughly chopped mushrooms. Cook, while stirring, for a few minutes until they begin to brown.

Add shallots

Add 3 ounces of finely chopped shallots. Sauté for about 3-4 minutes until they begin to soften.

Add herbs and seasoning

Add 1 clove of grated garlic, ¼ teaspoon of salt and ground black pepper each, and 1 spring of finely chopped fresh rosemary. Cook for 2 minutes then set aside for about 10 minutes to cool.

Add ricotta cheese

Transfer the mushroom mixture to a food processor and add 8 ounces of ricotta cheese. Blend until smooth then season with salt and pepper to taste.

Refrigerate

Transfer the blended mixture to ramekins then refrigerate for about 30 minutes to set.

Once set, serve chilled or at room temperature.
