Start by making a garlic sauce by sautéeing garlic in butter. Add flour, milk and salt and whisk well before bringing the mixture to a boil and simmering until thick. Mix in pumpkin puree and start to layer up the potatoes. Bake in the oven and broil for the final few minutes to make the cheese golden brown.

Layer the remaining potatoes on top of the cheese layer and repeat the process until no more ingredients remain.

Cover the baking dish with a sheet of aluminum foil sprayed with cooking spray. Bake in the oven for 1 hour and 15 minutes until the potatoes are soft.

For the final minutes of cooking, turn the heat to broil. Broil the potato bake until the cheese is golden brown and bubbly.
