Creamy Pumpkin and Cheddar Scalloped Potatoes always land on my Christmas dinner table! My family and guests always love the creaminess of these potatoes. And who could blame them? Fork tender potatoes smothered in a creamy pumpkin sauce – absolute perfection.

Start by making a garlic sauce by sautéing garlic in butter. Add flour, milk and salt and whisk well before bringing the mixture to a boil and simmering until thick. Mix in pumpkin puree and start to layer up the potatoes. Bake in the oven and broil for the final few minutes to make the cheese golden brown.

Heat the oven and prepare a dish

Preheat the oven to 395 °F and lightly grease a baking dish.

Whisk flour into the garlic butter. Add salt and gradually whisk in warm milk until smooth. Bring the mixture to a boil and reduce to a simmer. Simmer for 3-4 minutes until the sauce thickens. Season to taste with salt and pepper.

Add the pumpkin puree and whisk until smooth. Season to taste with salt and pepper.

Assemble the potato bake

Place half of the potatoes in the bottom of the baking dish. Season with salt and pepper and pour half of the sauce on top. Spread it out with a spoon and sprinkle half of the cheese on top. Layer the remaining potatoes on top of the cheese layer and repeat the process until no more ingredients remain.

Cover the baking dish with a sheet of aluminum foil sprayed with cooking spray. Bake in the oven for 1 hour and 15 minutes until the potatoes are soft.

For the final minutes of cooking, turn the heat to broil. Broil the potato bake until the cheese is golden brown and bubbly.

Serve

Allow the potatoes to cool and serve as a side dish.
