For this recipe, I roast butternut squash with red onion and garlic. Meanwhile, I cook quinoa in a vegetable broth. Cooking in broth is the easiest way to give quinoa more flavor. Then I make a simple dressing, combine all ingredients with mâche salad and I am ready to go. If mâche salad is not available, try purslane.
