For this recipe, I roast butternut squash with red onion and garlic. Meanwhile, I cook quinoa in a vegetable broth. Cooking in broth is the easiest way to give quinoa more flavor. Then I make a simple dressing, combine all ingredients with mâche salad and I am ready to go. If mâche salad is not available, try purslane. This packed with protein, fiber and nutrients salad comes together swiftly because so much is made at the same time.
To make this Warm Quinoa Salad with Butternut Squash and Pistachios, you will need the following ingredients:
Preheat the oven to 400 °F. On a baking sheet covered with parchment paper, combine 2 cups cubed butternut squash, ½ diced red onion, and 2 cloves chopped garlic and drizzle with 2 tablespoons olive oil. Season with salt and black pepper to taste and toss.
Spread vegetables in one layer and roast for about 20 minutes. Toss once halfway through.
Meanwhile, in a saucepan, add ⅔ cup quinoa, 1⅓ cups vegetable broth, and orange zest. Cook quinoa according to the package instructions.
In a dry pan, roast ⅓ cup pistachios for 2-3 minutes.
In a mason jar, mix orange juice, 2 remaining tablespoons olive oil, salt and black pepper to taste. Cover with a lid, and shake vigorously until combined.
Place cooked quinoa, butternut squash, 4 cups mâche salad, cranberries, and pistachios in a bowl. Add in dressing and toss to combine.
To serve, arrange the salad on plates and enjoy!
