Turkey Salad with Grapes & Cashews is one of my favorite summer salads and the only way to use up leftover turkey when the weather is warm! Cashew nuts are the secret ingredient to this salad giving a slight crunch with every bite. Texture is everything in a salad!
To make this salad, start by mixing mayo with yogurt and mustard to make a dressing. Add turkey, grapes, celery, cashews and green onions. Toss all of the ingredients together until fully coated. Serve the salad on a bed of lettuce.
To make Turkey Salad with Grapes & Cashews, you will need the following ingredients:
Mix ¼ cup of mayo, ¼ cup of plain yogurt, and 1 tablespoon of honey dijon mustard together in a large salad bowl.
Add 3 cups of cooked turkey, 1 cup of halved green grapes, 2 chopped celery ribs, ½ a cup of chopped cashews and 2 thinly sliced green onions to bowl with the dressing.
Toss well to coat.
Serve the salad on the lettuce leaves if desired. Enjoy!
