14 oz Cherry tomatoes
4 Shallots cut into wedges
2 cloves Garlic sliced
½ Lemon sliced
3 ½ oz Olives mix
2 sprigs Rosemary
6 sprigs Thyme
3 tbsp Olive oil divided, plus more for serving
4 oz Sourdough bread cubed
½ cup Greek yogurt
7 oz Feta cheese crumbled
1 tbsp Honey plus more for serving
¼ tsp Chili flakes
Salt to taste
Black pepper to taste

Olive oil roasted tomatoes, shallots, garlic, and olives served over addictively creamy and salty whipped feta cheese. Topped off with baked croûtons, this savory appetizer makes for a perfect BBQ recipe during the summer. It’s as simple as it is delicious.

The recipe is pretty easy yet full of flavor. Roast the vegetables with a good amount of olive oil and a few sprigs of rosemary and thyme. Meanwhile, whip up the feta. I find it easier to do this in a food processor. Just combine the feta, Greek yogurt, and honey and pulse until smooth and creamy. Once the veggies are done, spread the whipped feta out onto a serving plate and spoon the roasted veggies over top. Garnish with croûtons and chili flakes, and serve with more honey and olive oil for drizzling, if you wish.

Steps to make Whipped Feta Dip


Preheat oven

Preheat the oven to 425 ℉


Prepare vegetables


In a baking dish, combine 14 ounces cherry tomatoes, 4 shallots cut into wedges, 2 sliced garlic cloves, sliced ½ a lemon, 3 ½ ounces mixed olives. Place 2 sprigs rosemary and 6 sprigs thyme over and drizzle with 2 tablespoons olive oil. Toss to coat.




Roast in the preheated oven for 20-25 minutes


Prepare croûtons


On a baking sheet, toss together 4 ounces cubed bread with the remaining 1 tablespoon olive oil. Season with salt and black pepper and roast for about 10 minutes.


Combine yogurt, feta, and honey


In a food processor, combine ½ a cup Greek yogurt, 7 ounces crumbled feta, and 1 tablespoon honey.


Make feta dip


Pulse until smooth and creamy, scraping down the sides if needed, about 3 minutes.



To serve, spoon the vegetables over the whipped feta. Top with croûtons and garnish with a pinch of chili flakes. Enjoy
