This Vegan Banana Bread Baked Oatmeal is a perfect brunch recipe. As well as being full of healthy, wholesome and filling ingredients like banana, rolled oats, and flaxseed, this baked oatmeal is gluten-free too. 

To make this recipe, start by combining banana and wet ingredients. Add the dry ingredients and fold in walnuts. Transfer to a baking pan and spread out evenly. Top with slices of banana. Bake in the oven. You can serve this whichever way you prefer. For more liquid oatmeal, serve immediately after baking. Otherwise, let the oatmeal cool completely, then slice into bars. The bars will keep in the refrigerator for up to 5 days or the freezer for up to two months.

Heat oven and prepare baking dish

Preheat the oven to 350 °F.

Combine wet ingredients

Peel 2 ripe bananas and finely mash in a 9×13″ (or similar sized) baking dish. Add ¼ cup of maple syrup, 2 ½ cups of non-dairy milk, and 1 teaspoon of vanilla extract to the dish and mix until fully combined.

Add dry ingredients

Add in 2 ½ cups of oats, 2 tablespoons of flaxseeds, ½ teaspoon of cinnamon, 1 teaspoon of baking powder, and ¼ teaspoon of salt and mix well. Fold in ½ a cup of walnuts and use a rubber spatula to evenly spread the mix throughout the pan.

Top with sliced banana

Bake the oatmeal mixture in the oven for 30-35 minutes.

Serve immediately if you like a runny consistency or leave to cool and slice into bars if you prefer.
