These Lemon Millet Bliss Balls are a new and sweet way to prepare date balls. Perfect for a dessert or a quick, grab-‘n-go treat to have around the kitchen and I love that they’re vegan and gluten free too, which fits right into my eating plan! Tiny balls rolled from combined Medjool dates, cooked millet, oat flour, and lemon juice, and zest. Dust with coconut milk powder for the finishing finesse!

Steps to make Lemon Millet Bliss Balls

Prepare millet mixture

In a food processor, add 1 cup (about 12) of pitted dates with 1 cup of cooked millet, 1 cup of oat flour and the juice from ½ a lemon and zest from 1 lemon.

Process millet mixture

Blend until completely combined and mixture comes together into a large clump.

Roll balls

Roll the mixture into 12 balls.

Roll in coconut powder

Roll the balls in about 2 tablespoons of coconut milk powder to evenly coat.

Refrigerate

Refrigerate for about 2 hours until firm.

Serve

Serve chilled and keep in the fridge.
