This Puff Samosa is a fantastic Indian appetizer to accompany your favorite Indian curry. I always have puff pastry in my freezer, so any time I feel like making these delicious samosas, I simply remove the pastry an hour ahead of time, and it thaws while I prepare the filling! I often serve these alongside my favorite curry – Pav Bhaji.
Start by preparing the filling. Assemble the samosas by rolling out the pastry sheets and cutting them into squares. Brush the edges of each one with egg wash. Place a tablespoon of filling at the center of each pastry square and fold the pastry over the filling to form a triangle. Seal the edges and transfer to a baking sheet. Repeat until all the pastry and filling is used. Brush the top of each samosa with egg wash and bake in the oven until golden brown.
To make my Puff Samosa, you will need the following ingredients:
Place the potato cubes in a microwave-safe bowl and cook for 5 minutes in the microwave until soft. Once soft, mash the potatoes using a fork.
Heat 1 tablespoon of oil in a pan. Add finely chopped onion, 2 chopped garlic cloves, 1 green chili, ½ tbsp ginger, and pinch of salt. Sauté until the onions become translucent.
Add the mashed potatoes to the pan along with 1 cup of frozen green peas, 3 tablespoons of chopped cilantro, ¾ tsp red chili powder, ¼ tsp turmeric powder, salt and pepper to taste. Mix well and cook for 1 minute. Turn off the heat under the pan.
Whisk the egg in a small bowl and set aside.
Preheat the oven to 400 °F and line a large baking sheet with parchment paper.
Roll out each puff pastry sheet and cut each one into 9 equal squares giving 18 4 x 4-inch squares in total. Brush the edges of the pastry with egg wash.
Place the filling in the center of each square and fold the pastry over to form a triangle. Crimp the edges with a fork to seal.
Brush each of the samosas with egg wash.
Bake the samosas in the oven for 18 minutes until shiny and golden brown on top.
Serve warm.
