To make Zucchini Soup with Creme Fraiche, you will need the following ingredients:
In a saucepan over medium heat, heat the oil and add the onions. Cook, stirring often, for about 5 minutes until soft and translucent.
Add the zucchini and continue cooking and stirring for another 2 minutes.
Add the vegetable stock and bring the pot to a boil. Reduce heat and simmer at a medium heat for about 10 minutes until the zucchini has softened.
Using a food processor and working in batches, blend the soup mix until thickened.
In the saucepan over medium heat, rewarm the soup.
Season with salt and pepper and lightly whisk in the creme fraiche.
Serve in bowls with a drizzle of sherry vinegar for garnish.

Soup is actually really good though mine didn't turn out looking as amazing as the photos sadly.
Ate the leftovers cold taste good both ways in my opinion.
The sherry vingar is a bit too strong so i used normal vinegar other than that it was good.
Didnt like the grainy texture and the spices didnt go very well with it but not an awful thing to make though i think the russian soup had a lot more flavor to it.
