
Farmers market report: Ramps are in season. And I have a great recipe for you. A spin on the Sausage Tortellini Soup, this recipe has all the classic flavors but uses a surprise ingredient. It uses fresh spring ramps, also known as wild onion, to create a bold and satisfying flavor. Such an easy way to add more healthy veggies into our everyday diet.
At our house, we love the bright spring taste of ramps, and I look forward to cooking with them every spring. This recipe couldn’t be easy to make. To a Dutch oven, add the sliced chicken sausage, diced onions, and chopped carrots. Sauté, stirring occasionally, until the veggies are soft and the sausage is browned and cooked through. Add in the chicken broth and bring to a boil. Once at a boil, add in the cheese tortellini and cook until tender. Add the sliced ramps and cook for a few minutes until wilted. Taste and adjust for seasoning. Ramps can be found at farmers’ markets from early April through late May.
