Ingredients

For sweet potatoes:
1 lb Sweet potatoes 2 medium, diced into ½-inch or 1-inch thick pieces
2 tbsp Olive oil
½ tsp Salt
For maple lime dressing:
¼ cup Olive oil extra virgin
2 tbsp Maple syrup or honey
2 tbsp Lime juice freshly squeezed
Salt to taste
Black pepper to taste
Salad ingredients:
6 oz Baby spinach
1 Apples small green, unpeeled, chopped
1 Apples small red, unpeeled, chopped
⅓ cup Pecans toasted
½ cup Pepitas toasted
½ cup Cranberries dried
½ cup Feta cheese crumbled

Roasted sweet potatoes, juicy apples, toasted pecans and pepitas, and baby spinach get tossed with a light maple lime dressing. Dried cranberries and briny feta add an extra special touch. The salad is quick to make yet looks very elegant. 

To start, roast the sweet potatoes with a glug of olive oil and a pinch of salt. In the meantime, prepare the dressing. For the dressing, simply combine everything in a mason jar, and you’re done. Once the sweet potatoes are cool, assemble the salad. Combine the spinach, chopped apples, toasted nuts and seeds, dried cranberries, crumbled feta, and roasted sweet potatoes and toss with the prepared dressing. Serve and enjoy!

Preheat oven and prepare baking sheet

Preheat the oven to 400 °F and line a rimmed baking sheet with parchment paper.

Prepare sweet potatoes

To a large bowl, add the diced sweet potatoes, 2 tablespoons olive oil, and ½ teaspoon salt and toss to coat well.

Roast

Spread the sweet potatoes on the prepared baking sheet and roast on a center rack for 10 to 20 minutes. Once roasted, remove from the oven and set aside to cool.

Make maple lime dressing

Meanwhile, in a mason jar, add ¼ cup extra virgin olive oil, 2 tablespoons maple syrup, and 2 tablespoons lime juice and whisk to combine. Season with salt and black pepper if needed.

Assemble

To a large bowl, add 6 ounces baby spinach, 1 chopped green apple, 1 chopped red apple, ⅓ cup toasted pecans, ½ cup toasted pepitas, ½ cup dried cranberries, ½ cup crumbled feta cheese, and roasted sweet potatoes. Toss the salad with the maple lime dressing.

Transfer the salad to a large serving bowl or divide it between individual bowls and serve.
