To make this soup, start by sautéing some shallots until starting to brown. Add the rice and stir for 2 minutes before adding the garlic, ginger, and water. Simmer until the rice begins to swell, then add the sweet potato rounds and continue to simmer until the rice and potatoes are tender. Add the chicken followed by fresh lime juice, soy and oyster sauce. Season and serve in bowls garnished with fresh cilantro leaves and toasted sesame oil for extra flavor! If you’re planning to enjoy this soup leftover, reheat and add a little water to thin and make the rice and chicken soupy again.

Sauté shallots

In a Dutch oven or soup pot over medium heat, heat 1 tablespoon extra-virgin olive oil. Add 1 thinly sliced shallot and sauté for about 5 minutes until starting to brown.

Add rice

Add â…“ cup rice and stir while cooking for 2 minutes.

Add garlic, ginger, and water

Stir in 4 finely chopped cloves garlic, matchsticks of ginger, and 8 cups water. Add in 1 teaspoon salt and bring to a boil.

Simmer

Reduce heat to medium-low and simmer, uncovered, stirring occasionally, for about 8–10 minutes or until the rice has started to expand.

Add sweet potatoes

Add 2 small sweet potatoes and simmer over medium-low heat, uncovered, stirring occasionally, for about 15 minutes until the soup is thickened and potatoes and rice are tender.

Add chicken

Add 2 cups cooked and shredded chicken and cook for 2 minutes to heat through.

Add lime juice, soy and oyster sauce

Stir in 2 tablespoons fresh lime juice, 2 tablespoons low-sodium soy sauce, and 1 tablespoon oyster sauce. Season with salt.

To serve, divide the soup among bowls. Top with fresh cilantro, a drizzle of toasted sesame oil, and a grind or two of fresh black pepper. Enjoy!
