This Apple and Corn Salad is one of my favorite Christmas side dish recipes. It is healthy and delicious and because it doesn’t have a heavy dressing, it makes a fresh light accompaniment to Christmas dinner. Your guests will love it!
Start by mixing diced apples with lemon juice in a large bowl. This will stop the apple chunks from turning brown. Add corn, mayo, salt, ground black pepper, and parsley and toss well to coat. Transfer to the refrigerator for a minimum of 2 hours before serving alongside the traditional Christmas dinner.
To make Apple and Corn Salad, you will need the following ingredients:
Mix two large cubed apples with 1 teaspoon lemon juice in a large bowl. Toss well to ensure the apple is fully coated.
Add the 5 cups of corn, ¼ cup of mayo, ¼ teaspoon of salt, ¼ teaspoon of ground black pepper, 2 tablespoons of finely chopped parsley and toss well to coat.
Transfer the salad to a container and chill in the refrigerator for at least 2 hours until ready to serve.
Serve as a side dish with your Christmas turkey dinner this year.
