¼ cup Apricot jam
1 tbsp Soy sauce low sodium
1 tbsp Worcestershire sauce
1 tbsp Cider vinegar
1 tsp Cornstarch

To make this sheet pan dinner, start by place carrots and potatoes on a baking sheet. Drizzle with oil and season. Place chicken breasts in the center of the vegetables and again, season and drizzle with oil. Bake in the oven until cooked through. Thirty minutes later, you’ll be digging into a delicious one pan dinner.

Steps to make Apricot Chicken Sheet Pan Dinner

Heat oven and prepare a baking sheet

Preheat the oven to 375 °F. Line a large rimmed baking sheet with parchment paper.

Make seasoning mix

Mix 2 teaspoons of salt, 1 teaspoon of garlic powder, ½ a teaspoon of black pepper, ½ a teaspoon of paprika and ¼ teaspoon of onion powder together in a small bowl.

Prepare potatoes and carrots for roasting

Place 1 pound of potatoes and 3-4 sliced carrots on a baking sheet. Drizzle with 1 tablespoon of the oil and sprinkle with half of the seasoning mix. Toss to coat.

Place chicken on baking sheet

Create a space in the center of the potatoes and carrots. Place 4 chicken breasts in the center of the pan and drizzle with remaining 1 tablespoon oil and sprinkle with the remaining seasoning mix.

Bake

Place the baking sheet in the oven and cook for 25-30 minutes until everything is cooked through.

Make glaze

Whisk ¼ cup of apricot jam with 1 tablespoon each of soy sauce, Worcestershire sauce, cider vinegar and 1 teaspoon of cornstarch. Microwave on high at 30 second intervals, stirring in between, until the glaze is slightly thickened.

Serve

Brush the chicken with apricot glaze and serve immediately.
