    This Sesame Chicken Salad serves a generous 6 persons and makes for a perfect option to brunch or lunch. Low in carbs and high in protein and good fats and i love Asian inspired flavors and dishes. Grilled chicken breasts served on top of shredded cabbage, carrot and green onion salad and sprinkled with sesame seeds and peanuts then drizzled with Asian salad dressing. Sounds good, right?

    Steps to make Sesame Chicken Salad

    Marinate chicken

    In a mixing bowl, combine 1 pound of boneless chicken with ½ cup of sweet and sour sauce and set aside to marinate for about an hour.

    Cook chicken

    In a skillet over high heat, grill or cook the chicken until evenly cooked on both sides without overcooking then slice into thin strips.

    Combine salad

    In a large salad bowl, toss ½ a shredded cabbage with 1 shredded carrot and 2 shredded green onions until combined.

    Serve

    Serve the salad on individual plates and top with the chicken strips and sprinkle with sesame seeds and peanuts! Drizzle with Asian dressing right before serving.
