The highlight of this dish is the sauce. Made with garlic, herbs, chicken broth, white wine, butter, and lemon juice, this mouthwatering pan sauce is perfect with chicken. This lemon & thyme chicken is a one-pan recipe and is easy to prepare. Start with the chicken at room temperature. If the thickness of the chicken breasts varies greatly, pound them to an even thickness. Season the chicken with a good pinch of salt and black pepper. Then dredge through flour and pan-sear in a hot skillet until golden and nice. Remove the chicken from the skillet and keep warm while you proceed with the recipe. To the same skillet, add a little more olive oil, if needed, and sauté the garlic and thyme for a minute. Then deglaze the skillet with the white wine and add the chicken broth. Cook until slightly reduced and thickened. Now, stir in the lemon juice and butter. Keep stirring until the butter has melted. Add the chicken back to the skillet and spoon the lemon garlic butter sauce over the top. Serve the chicken sprinkled with some fresh thyme if you wish.

Season and flour the chicken

Season both sides of the chicken breasts with 1 teaspoon kosher salt and 1 teaspoon freshly ground black pepper. Place ¼ cup all-purpose flour in a shallow plate, then dredge each piece of chicken through it to coat. Shake gently to remove any excess flour.

Cook chicken

In a large skillet over medium-high heat, heat 1 tablespoon olive oil and add the chicken. Sauté for 2-3 minutes per side until the chicken has cooked through and lightly golden. Remove the chicken from the skillet and place on a plate. Cover with foil and set aside while you proceed with the recipe.

Sauté garlic and thyme

If the skillet is dry, add a teaspoon olive oil. Add 3 minced garlic cloves and 2 teaspoons minced thyme leaves and sauté, stirring, for about 1 minute just until fragrant.
