When fall is upon us, my family and I crave comfort food. And nothing says comfort food to me like a filling soup and rich tasting stew. So this family-friendly recipe perfectly fits the bill. For this recipe, I call for bone-in meat. Fatty and bone-in cuts do require a little precooking before adding in the veggies, which flavors and adds depth to the broth. But it’s totally worth the extra step. This recipe is adaptable, though. Pork spareribs, beef spareribs, or oxtail would be delicious. Serve in large bowls and enjoy!

Cook meat

In a large pot with 4 quarts water, cook 1 pound bone-in meat with 2 tablespoons beef bouillon base for 30 minutes.

Add potatoes and cabbage

Add in 3 diced potatoes and ½ head shredded cabbage and simmer for 10 minutes more.

Sauté onions

In a skillet, heat some oil and sauté 1 diced onion until golden brown, about 5 minutes.

Add carrots

Add 1 shredded carrot and sauté for 5 minutes more.

Add tomatoes

Add 1 (10-oz) can of diced tomatoes and cook for another 5 minutes.

Add sautéed vegetables

Add sautéed vegetable mixture to the soup pot.

Take meat off bone

Remove meat from the pot and take the meat off the bone. Add the meat back to the soup and discard the bone. Season with salt to taste.
