For this recipe, I call for bone-in meat. Fatty and bone-in cuts do require a little precooking before adding in the veggies, which flavors and adds depth to the broth. But it’s totally worth the extra step. This recipe is adaptable, though. Pork spareribs, beef spareribs, or oxtail would be delicious. Serve in large bowls and enjoy!
