Ingredients

12 - 14 oz Beef rump or fillet, thinly sliced , or other quick cooking cut of beef
1½ tbsp Vegetable oil or peanut oil
2 cloves Dried garlic finely chopped
½ Onion finely sliced
1 head Broccoli large, broken into small florets
14-15 oz Egg noodles hokkien, lo mein, Singapore - from the fridge
For sauce:
½ cup Water
½ tbsp Cornstarch or cornflour
2 tbsp Soy sauce dark
1 ½ tbsp Soy sauce light
1 ½ tbsp Chinese cooking wine Shaoxing wine
1 tsp Sugar omit if using Mirin
⅛ tsp Chinese five spice powder optional
½ tsp Sesame oil optional
¼ tsp Black pepper or white
Optional garnishes:
Sesame seeds
Green onion chopped, or shallots , or scallions

I love the combination of beef and broccoli in this dish and the best thing about it is how quick and easy it is to assemble and cook. It is much quicker and healthier than calling a takeout!

To make this delicious stir-fried beef dish, start by whisking up a sauce from water, cornflour, soy sauce and a few additional ingredients. Mix beef with a small bit of the sauce to marinate. Cook and drain broccoli & noodles. Heat oil in a large skillet or wok. Make sure it gets very hot for stir-frying. Add garlic and onion. Stir-fry and add the beef. Combine the veggies and beef with the noodles, broccoli and sauce. Toss the whole lot together until the sauce thickens and coats the noodles. Serve sprinkled with sesame seeds and shallots. Yum!

Steps to make Long-Life Chinese Noodles with Beef & Broccoli

Prepare sauce

Place ½ a cup of water and 1 tablespoon of cornflour in a bowl and mix with a whisk. Add 2 tablespoons of dark soy sauce, 1 ½ tablespoons each of light soy sauce and Chinese cooking wine, 1 teaspoon of white sugar, ⅛ teaspoon of Chinese five spice powder, ½ a teaspoon of sesame oil, and ¼ teaspoon of pepper and whisk until smooth.

Mix beef and sauce

Place 12-14 ounces of thinly sliced beef in a bowl and mix with 1 ½ tablespoons of the sauce.

Cook broccoli and noodles

Bring a large pot of water to a boil. Add the broccoli florets and cook for 1 minute. Add the noodles and cook for just 15 seconds. Separate the noodles using a wooden spoon. Drain immediately. Do not overcook.

Stir-fry garlic and onions

Heat 1 ½ tablespoons of oil in a skillet or wok. Add 2 finely chopped garlic cloves and stir quickly. Add ½ a finely sliced onion and cook for 1 minute.

Cook beef

Add beef to the pan and cook while stirring until it changes from red to brown.

Add remaining ingredients

Add the cooked noodles, broccoli and sauce. Toss all the ingredients together for 1 ½ to 2 minutes until the sauce thickens and coats the noodles.

Serve

Serve sprinkled with sesame seeds and shallots or green onions.
