Chicken Zoodle Soup
This Chicken Zoodle Soup is a really healthy and wholesome soup that is so nourishing. A perfect soup as the weather starts to turn a bit cooler.  Â
For this soup, I start by seasoning and cooking chicken. Saute garlic, onion, carrots, and celery until tender before stirring in thyme and rosemary. Add chicken stock and zucchini noodles and return the chicken to the pot. Reduce the heat and simmer until the zucchini noodles are tender. Stir in lemon juice and season with salt and pepper to taste. Serve garnished with freshly chopped rosemary and parsley, if desired.
