
I like to make this Cinnamon-Apple Cake AKA Hanukkah Cake for the most festive of Jewish holidays. This recipe comes from my mom, who made this delicious cake for our family once a year. It is easy to whip up, doesn’t require fancy ingredients, and will feed a crowd. The cake is loaded with apples, it’s buttery, moist and dense, and topped with cinnamon sugar.
To make this recipe, preheat the oven and spray an 8-inch springform pan with cooking spray. Use a stand mixer fitted with the paddle attachment (or a large mixing bowl with an electric mixer) to combine the wet ingredients: butter, sugar, cream cheese, vanilla, and eggs until creamy and free of lumps. Prepare cinnamon sugar and set aside. In a separate bowl, combine the dry ingredients: all-purpose flour, baking powder, salt, and 2 tablespoons of cinnamon sugar. Gradually add to the butter mixture and beat until smooth. Fold in the chopped apples. Use baking apples such as Jonagold, Honeycrisp, Gala, or Granny Smith. Pour the batter into the prepared pan and bake in the preheated oven for 1 hour 15 minutes, or until the cake pulls away slightly from the edges of the pan.
