This super healthy Copper Penny Carrot Salad, loaded with vegetables, is the perfect balance of sweet and sour. Copper penny carrots is a traditional salad from South Africa. It works perfectly as a warm side dish, or as a chilled salad. In fact, refrigerating it is what brings out all the flavor.
The star of the show is the carrot, but onion, pepper and celery add lots of extra taste and everything is brought together by the rich tomato soup. This copper pennies recipe is very simple to put together and is a great option to bring along to a picnic or pot luck.
To make the Copper Penny Carrot Salad, you will need the following ingredients:
Add the sliced carrots to a pan of boiling water and boil for around 10 minutes, until the carrots have softened. Drain the water off.
Combine the cooked carrots, celery, green pepper, and onion in a large bowl.
Add the tomato soup, sugar, oil and vinegar to a pan and bring to the boil. Stir until the sugar has dissolved and then remove from the heat and leave to cool for 10-15 minutes.
Add the soup mixture to the bowl of vegetables and stir until everything is well coated. Refrigerate overnight and the salad is then ready to serve.
