Move over Miss Daisy, this Cowboy Rice Salad is coming through. Using authentic Southwestern flavors like lime juice, honey, chipotle, cumin and garlic and salad ingredients of colorful bell peppers, red onions, corn kernels, black beans and juicy tomatoes.
This salad bowl is definitely a top favorite! Don’t forget to mix in some fresh coriander leaves, for that real Southern taste.
To make Cowboy Rice Salad, you will need the following ingredients:
In a saucepan over medium-high heat, place rice and water and cover. When water starts to bubble, turn down the heat to low and cook for 15 minutes until water has evaporated and rice cooked.
Remove from heat and take off the lid. Let stand for 10 minutes and then fluff with a fork. Allow to cool to room temperature or refrigerate to cool faster.
In a salad dressing jar, mix the lime juice, olive oil, honey, chipotle powder, cumin powder, garlic powder, salt and pepper to taste. Adjust flavors and spices to your preference.
Toss salad well, with the prepared dressing.
Serve as is and enjoy!
