1½ cups Brown rice
2¾ cups Water
For the dressing:
â…“ cup Lime juice plus more to taste
½ cup Olive oil
1½ tbsp Honey
½ tsp Chipotle powder (sub with smoked paprika + cayenne pepper
½ tsp Cumin powder
½ tsp Garlic powder or 1 garlic clove, minced
¾ tsp Salt
¾ tsp Black pepper
For the salad:
1 Green bell pepper diced
1 Red bell pepper diced
1 Red onion chopped
1 can 14 oz Corn kernels drained
1 can / 14 oz Black beans drained and rinsed
3 Tomatoes watery seeds removed then diced
1 cup Cilantro coriander/cilantro leaves, roughly chopped

    Cook rice

    In a saucepan over medium-high heat, place rice and water and cover. When water starts to bubble, turn down the heat to low and cook for 15 minutes until water has evaporated and rice cooked.

    Rest rice

    Remove from heat and take off the lid. Let stand for 10 minutes and then fluff with a fork. Allow to cool to room temperature or refrigerate to cool faster.

    Prepare dressing

    In a salad dressing jar, mix the lime juice, olive oil, honey, chipotle powder, cumin powder, garlic powder, salt and pepper to taste. Adjust flavors and spices to your preference.

    Toss salad well, with the prepared dressing.
