2 tbsp Unsalted butter divided
2 tbsp Olive oil extra-virgin, divided
1 Onion medium, very thinly sliced
3 cloves Garlic smashed
5 cups Canned whole tomatoes in their juice, from three 14-oz cans
1 cup Water
⅔ cup Heavy cream
1 tbsp Sugar
¼ tsp Crushed red pepper
¼ tsp Celery seed
¼ tsp Dried oregano
Salt to taste
Black pepper freshly ground, to taste
4 slices White bread ¾-inch-thick, crusts trimmed, cut into ¾-inch dice

Steps to make Creamy Tomato Soup with Buttery Croutons


Cook onions and garlic


In a large pot, heat 1 tablespoon butter and 1 tablespoon olive oil. Add 1 thinly sliced onion and 3 smashed garlic cloves and cook over medium heat, stirring occasionally, until softened for about 3-4 minutes.


Add remaining soup ingredients


Add 5 cups tomatoes with their juices, 1 cup water, ⅔ cup heavy cream, 1 tablespoon sugar, ¼ teaspoon crushed red pepper, ¼ teaspoon celery seeds, and ¼ teaspoon oregano. Season with salt and freshly ground black pepper to taste.




Bring to a boil over high heat, breaking up the tomatoes with a wooden spoon. Once at a boil, reduce the heat to medium and simmer the soup for 10 minutes.


Make brown butter


Meanwhile, in a small skillet over medium-high heat, cook the remaining 1 tablespoon butter until it begins to brown, about 1 minute. Pour the browned butter into a medium bowl.


Make croûtons


Add the remaining 1 tablespoon olive oil to the same skillet. Add the diced bread and cook over medium-high heat for about 5 minutes, stirring occasionally, or until golden-brown.


Combine croûtons and butter


Transfer the croûtons to the bowl with browned butter and toss to coat.


Blend soup


In batches, transfer the soup to a blender and puree until smooth.


Reheat and adjust seasoning


Return the soup to a pot and rewarm if needed. Taste and adjust salt and pepper.



Serve in bowls with buttery croûtons on top.
