This easy and exciting Tomato and Red Pepper Soup recipe relies on simple ingredients, such as ripe tomatoes, sweet onions, garlic, roasted red bell peppers, vegetable stock, and olive oil. I love icy tomato soup and roasted tomato soup. These easy recipes have been on regular rotation at our house this summer because they use seasonal produce and are a hit at our table. But I’m currently in love with this tomato and roasted pepper soup. It’s a little smoky, creamy, flavorful, and ready in a mere 30 minutes.

For this delicious one-pot soup recipe, I’m using onions and garlic to begin the flavoring process. Heat the olive oil in a large pot and add the onions, garlic, and a large pinch of salt. Cook until tender. Add in the tomatoes, roasted peppers, and vegetable stock. Bring to a simmer and cook for 15 minutes. Transfer the soup to a blender. Purée the ingredients until creamy and smooth. Taste and adjust the seasoning if needed. Ladle into bowls and serve immediately. Simple and amazing. The recipe is vegetarian, vegan, and gluten-free. Enjoy!

In a large pot over low-medium heat, heat 2 tablespoons olive oil and add 1 finely chopped onion and 3 sliced garlic cloves. Add a large pinch of salt and cook, stirring frequently, for 10 minutes until the onions are soft.

Add in the chopped tomatoes, roasted peppers, and 2 ¼ cups vegetable stock. Bring to a simmer and cook for 15 minutes.

Transfer the soup in batches to a blender and purée until creamy and smooth. Taste and adjust the seasoning if needed.
