
I don’t know about you, but I love to experiment in the kitchen and these Crispy Zucchini Fritters are the result of a recent successful kitchen experiment! In my book, the best (and only) way to cook fritters is to make them nice and crispy on the outside. Vegetable fritters are a really great way to sneak more veggies into your diet.
Start these fritters by draining the excess liquid from the zucchini. To do this, I place the zucchini in a colander. Then I sprinkle it with salt and let it drain for a few minutes before squeezing out the excess water by wrapping it in a tea towel. Then I mix all the fritter ingredients together in a bowl and fry them in hot oil until they are crispy and golden brown.
