Begin by heating the heavy cream on the stove. Next, pour the hot cream over the chopped chocolate and stir together until completely smooth. Then add some raspberry preserves and chill until the chocolate mixture is hard enough to roll into balls. Then just roll into balls, freeze until firm, roll the balls in the cocoa powder, and savor the taste of chocolate goodness.

Steps to make Dark Chocolate Raspberry Truffles

Heat heavy cream

In a saucepan over medium-high heat, heat 4 ounces heavy cream until almost boiling.

Melt chocolate

Meanwhile, place 8 ounces chopped dark chocolate or chocolate chips in a medium bowl. Once the cream is hot and starting to bubble, immediately pour it over the chocolate and let sit for 5 minutes undisturbed, then stir together. If the mixture is not completely smooth with all the chocolate melted, microwave in 15-second increments and stir until smooth.

Add raspberry preserves and chill

Stir in 2 tablespoons of raspberry preserves. Chill uncovered for about 2 hours or until the ganache is hard enough to roll into balls.

Shape truffles

Line a baking sheet with parchment paper. Use a melon baller or a tablespoon to scoop out portions of chocolate ganache. Using your hands, roll into small balls. Arrange on the prepared baking sheet and freeze for 15 minutes.

Dust with cocoa

Place ½ cup dark cocoa powder in a bowl. Roll each truffle in cocoa powder to coat.

Serve

Store the truffles refrigerated in an airtight container until ready to serve.
