Prepare warm mixture

In a saucepan over medium heat, combine heavy cream, butter and salt and simmer until hot.

Add chocolate

Remove from heat and pour over chocolate into a heatproof bowl. Set aside for about 10 minutes until chocolate is completely melted. Use a rubber spatula to mix until smooth. You may need to microwave for a few seconds to melt further.

Add flavors

Add vanilla extract, almond extract and rum and whisk until you have a smooth and shiny ganache. Transfer to a shallow baking dish.

Refrigerate

Refrigerate for at least 3 hours to overnight, to set.

Prepare truffle balls

Once set, use tablespoons and roll ganache into 18-24 truffle balls then dip them in amaretti cookies, to coat. Arrange on a baking sheet, lined with parchment paper. If freezing, do not add cookie topping.

Refrigerate, again, for at least 1 hour to overnight or cover and freeze for up to 2 weeks.

Set aside for 20 minutes to thaw to room temperature before serving.
