Ingredients

1 tbsp Olive oil
1 tbsp Butter
12 oz Zucchini about 2 medium, diced into ½-inch pieces
12 oz Yellow squash about 2 medium, diced into ½-inch pieces
1½ cups Cherry tomatoes
¾ tsp Dried Italian seasoning
¾ tsp Garlic powder
Salt to taste
Black pepper to taste
½ cup Parmesan cheese finely shredded

Garlic-Parmesan Zucchini Squash & Tomatoes is one of those side dishes that I love to make when the tomatoes and zucchinis I grow in my vegetable patch ripen. It’s full of Mediterranean flavors thanks to garlic and Parmesan.

It is super simple to make too. Start by sautéing zucchini and squash before adding tomatoes, Italian seasoning, garlic powder and salt and pepper to taste. Continue to sauté until the squash is tender and tomatoes are starting to burst. Stir half the Parmesan into the sautéd vegetables before scattering the remaining Parmesan over the top of the dish. Serve warm.

Steps to make Garlic-Parmesan Zucchini Squash & Tomatoes

Melt butter and oil

Heat 1 tablespoon each of butter and olive oil in a large heavy based skillet over medium-high heat.

Sauté squash and zucchini

Add 12 ounces each of zucchini and squash and sauté for 2 minutes.

Add tomatoes and season

Mix in 1½ cups of tomatoes and evenly sprinkle in ¾ teaspoon each of Italian seasoning and garlic powder. Season to taste with salt and pepper.

Continue to cook

Sauté for another 3-5 minutes until the squash is tender and the tomatoes are beginning to burst.

Serve

Stir in half of the Parmesan and scatter the remaining Parmesan over the top of the dish. Serve while still warm.
