Start out by preparing the grapefruit. Peel and segment the grapefruit, holding over a bowl to catch juices, then squeeze membranes to extract any remaining juice. Prepping the grapefruit segments takes some time but can be done a day in advance and refrigerated until required. Next, mix the vinaigrette. Whisk together the grapefruit juice, olive oil, a little sugar, and a pinch of salt and black pepper. Divide the lettuce along with feta, grapefruit segments and walnuts among the serving plates or bowls and drizzle the vinaigrette over. Enjoy!

Prepare grapefruit

In a small bowl, whisk together 3 tablespoons grapefruit juice, 2 tablespoons extra-virgin olive oil, ½ teaspoon sugar, ⅛ teaspoon salt, and ⅛ teaspoon black pepper.

Divide 4 cups torn butter lettuce evenly among 4 plates. Sprinkle 1 tablespoon crumbled feta cheese and 1 tablespoon toasted walnuts over each salad. Divide the grapefruit segments evenly among plates, and drizzle with the prepared vinaigrette.
