Crisp and juicy, sweet and salty, this salad pairs ruby grapefruit with butter lettuce, briny feta, and some rich toasted walnuts. All drizzled with a homemade grapefruit olive oil vinaigrette for a flavorful and hassle-free dish.  

Start out by preparing the grapefruit. Peel and segment the grapefruit, holding over a bowl to catch juices, then squeeze membranes to extract any remaining juice. Prepping the grapefruit segments takes some time but can be done a day in advance and refrigerated until required. Next, mix the vinaigrette. Whisk together the grapefruit juice, olive oil, a little sugar, and a pinch of salt and black pepper. Divide the lettuce along with feta, grapefruit segments and walnuts among the serving plates or bowls and drizzle the vinaigrette over. Enjoy!
