Grapefruit, Walnut, and Feta Salad


Enter this vibrant and delicious Grapefruit, Walnut, and Feta Salad! Its the perfect wintry salad to enjoy when you need to balance out the rich foods we typically eat during the holiday season! Crisp and juicy, sweet and salty, this salad pairs ruby grapefruit with butter lettuce, briny feta, and some rich toasted walnuts. All drizzled with a homemade grapefruit olive oil vinaigrette for a flavorful and hassle-free dish.  

Start out by preparing the grapefruit. Peel and segment the grapefruit, holding over a bowl to catch juices, then squeeze membranes to extract any remaining juice. Prepping the grapefruit segments takes some time but can be done a day in advance and refrigerated until required. Next, mix the vinaigrette. Whisk together the grapefruit juice, olive oil, a little sugar, and a pinch of salt and black pepper. Divide the lettuce along with feta, grapefruit segments and walnuts among the serving plates or bowls and drizzle the vinaigrette over. Enjoy!

Steps to make Grapefruit, Walnut, and Feta Salad


Prepare grapefruit


Peel and segment the grapefruit, holding over a bowl to catch juices, then squeeze membranes to extract any remaining juice. Discard the membranes.


Prepare vinaigrette


In a small bowl, whisk together 3 tablespoons grapefruit juice, 2 tablespoons extra-virgin olive oil, ½ teaspoon sugar, ⅛ teaspoon salt, and ⅛ teaspoon black pepper.


Assemble salad


Divide 4 cups torn butter lettuce evenly among 4 plates. Sprinkle 1 tablespoon crumbled feta cheese and 1 tablespoon toasted walnuts over each salad. Divide the grapefruit segments evenly among plates, and drizzle with the prepared vinaigrette.
