1/2 cup Quinoa uncooked
2 Ears of corn
1 pint Cherry tomatoes halved
2 Green onion thinly sliced
4 ounces Mozzarella fresh balls, halved
1/4 cup Basil fresh, chopped
2 tbsp Balsamic vinegar
2 tsp Lemon juice fresh
2 tsp Maple syrup pure
1 tsp Dijon mustard
6 tbsp Olive oil extra virgin
to taste Salt

This Healthy Grilled Corn Caprese Quinoa Salad has all the flavors of a classic caprese with added quinoa and corn. I love the crunch that the grilled corn brings to this dish. Caprese salad combines fresh mozzarella cheese, basil, and tomatoes to make one of the most delicious salads ever.

To make this salad, I start by cooking the quinoa and grilling some corn. I make a dressing from balsamic vinegar, lemon juice, maple syrup, mustard, olive oil, salt, and pepper. I use this to dress the salad made from quinoa, cherry tomatoes, green onions, mozzarella, and fresh basil. The end result is a caprese salad with crisp grilled corn and healthy quinoa.

Steps to make Healthy Grilled Corn Caprese Quinoa Salad


Cook the quinoa


Follow the cooking instructions on the quinoa pack.


Grill the corn


Heat a grill to medium. Remove any husks and silk from the corn ears. Grill the corn for about 15-20 minutes. Turn regularly (every 3-4 minutes) until the corn is evenly charred all over. Remove from the heat and set it to one side to cool down.


Assemble the salad ingredients


Place the cooked quinoa, cherry tomatoes, green onions, mozzarella, and fresh basil in a large salad bowl.


Chop the corn


When the corn ears are cool enough to handle, use a sharp knife to cut the kernels from the ear. Add the corn to the salad bowl.


Make the dressing


Combine the balsamic vinegar, lemon juice, maple syrup, mustard, salt, and pepper in a separate bowl or jug and whisk. While whisking, slowly pour in the olive oil. Taste and adjust the seasoning if necessary.


Dress the salad


Add the dressing to the salad and mix well until all the ingredients are fully combined.
