Ingredients

For the Dressing
2 tbsp Olive oil
1 Lemon freshly squeezed
2 tbsp Water
2 tbsp Red wine vinegar
2 tbsp Parsley fresh, chopped
2 tsp Dried basil
2 tsp Garlic minced
1 tsp Dried oregano
1 tsp Salt
Black pepper cracked, to taste
1 pound Chicken thighs skinless, boneless fillets (or chicken breasts)
For the Salad
4 cups Romaine lettuce washed and dried
1 Cucumber large, halved and sliced
2 Plum tomato diced
1 Red onion sliced
1 Avocado sliced
⅓ cup Kalamata olives or black olives, pitted and sliced (optional)
1 Lemon wedges, to serve

I always ask what makes a salad so tasty and with this Grilled Lemon and Herb Mediterranean Chicken Salad, I’m pretty certain it’s the tangy dressing drizzled over a Mediterranean chicken salad composed of lettuce leaves, cucumber, plum tomatoes, red onion slices, avocado slices and pitted olives. Do you feel like you’re chilling out somewhere between the Pacific Ocean and Mediterranean Sea yet? With a touch of olive oil, lemon juice, red wine vinegar, garlic and basil dressing, you’ll be all the way there!

Steps to make Grilled Lemon Mediterranean Chicken Salad

Prepare dressing

In a jar or small bowl, whisk 2 tablespoons of olive oil with the juice from 1 lemon, 2 tablespoons of water, 2 tablespoons of red wine vinegar, 2 tablespoons of chopped, fresh parsley, 2 teaspoons of dried basil, 2 teaspoons of minced garlic, 1 teaspoon of dried oregano, 1 teaspoon of salt and some cracked pepper, to taste, until well combined into a marinade. Pour half of the prepared marinade into a low dish and refrigerate the remaining half to use as dressing later.

Marinate chicken

Add 1 pound of chicken thighs or fillets to the low dish with marinade and generously coat. Refrigerate for about 15-30 minutes to marinate.

Prepare salad

In a salad bowl, gently toss 4 cups of lettuce leaves with 1 large cucumber, 2 diced plum tomatoes, 1 sliced red onion, 1 sliced avocado and ⅓ cup of pitted and sliced Kalamata olives, if using.

Grill chicken

Once well marinated, in a grill pan over medium-high heat, heat 1 tablespoon of oil and add the marinated chicken pieces. Grill on both sides until evenly browned and cooked perfectly through the center. Rest for 5 minutes.

Serve

Slice the chicken pieces and place over the salad then, drizzle the remaining marinade dressing over and serve with lemon wedges.
