
Oh yum! This Grilled Chicken Corn Salad goes well on any summer table. This is a fantastic lunch recipe or it can make a delicious light dinner too. I love the ingredient combination of crisp lettuce and seasonal cherry tomatoes mixed with creamy avocado and crunchy corn. A real classic!
Start by combining lettuce, cherry tomatoes, onion and avocado in a large salad bowl. Add corn kernels and toss gently together. Prepare a dressing by whisking oil, vinegar, salt, pepper, and oregano together and pour this over the salad and toss lightly to coat. To serve, place the salad on serving plates and arrange half a sliced grilled chicken breast on top of the dressed salad. Delicious!
