Ingredients

2 Zucchini medium , cut into 1-inch thick half-moons
1 (10-oz) package Mushrooms baby bella mushrooms, cleaned and halved
1 Red onion medium, cut into wedges
2 Lemon small, cut into eighths
3 tbsp Olive oil extra-virgin
1 clove Garlic grated
1 tsp Fresh thyme chopped, or oregano, rosemary
pinch Red pepper flakes crushed
Kosher Salt
Black pepper freshly ground

These Veggie Kebabs are a perfect barbecue dish this summer. A delicious combination of my favorite veggies: mushrooms, zucchini, and garlic. Just remember, if you are using wooden skewers, soak them in water for at least 30 minutes before you assemble the kebabs!

To make these vegetarian kebabs, start by preheating the grill to medium-high. Thread each skewer with zucchini, mushrooms, onions, and lemon pieces, alternating each. Combine oil, garlic, herbs, and red pepper flakes in a small bowl. Brush the skewers with the flavored oil and season skewers with salt and pepper. Grill, turning occasionally, until vegetables are tender and slightly charred.

Steps to make Veggie Kebabs

Soak skewers

If using wooden skewers, soak in cold water.

Preheat grill

Heat a grill to medium-high.

Add veggies to skewers

Thread zucchini, mushroom halves, onion wedges, and lemon pieces onto the skewers, alternating each ingredient.

Make flavored oil

Combine 3 tablespoons of extra-virgin olive oil, 1 grated garlic clove, 1 teaspoon of freshly chopped thyme, oregano, or rosemary and a pinch of crushed red pepper flakes in a small bowl.

Brush veggies with oil and season

Brush the veggies with oil and season the skewers with salt and pepper.

Grill

Grill for 12-14 minutes, turning occasionally, until the veggies are tender and slightly charred.

Serve immediately.
