We’re having Healthy Oatmeal Breakfast Cookies today! These words sound like music to my kids. Sometimes we all have to switch up our breakfast routine with something special. And I propose to switch it up with something tasty and healthy, of course, and something that all the family will love!

As for me, I love this recipe because it is healthy, easy, versatile, and can be mixed up in one bowl. These cookies are packed with oats, almond butter, seeds, sliced almonds, and cranberries. Besides, the cookies are naturally sweetened with banana, honey, and applesauce. So, these homemade cookies are not only prepared with good-for-you ingredients but also taste good!

Steps to make Healthy Oatmeal Breakfast Cookies

Heat oven and prepare baking sheet

Preheat the oven to 325 °F and line a baking sheet with parchment paper.

Combine all ingredients

In a large bowl of a stand mixer, add 2 cups quick cooking oats, 1 cup almond butter, ½ teaspoon salt, 1½ teaspoons ground cinnamon, ½ cup mashed banana, 3 tablespoons honey, ¼ cup applesauce, 3 tablespoons hemp hearts, 1 tablespoon ground flax seeds, ⅓ cup dried cranberries, ⅓ cup dark chocolate chips, and ¼ cup sliced almonds.

Mix well until combined.

Form cookies

Using a 3-tablespoon cookie scoop, scoop the dough into 14 balls and place on the prepared baking sheet. Press down to flatten each ball to about ½-inch thick.

Cool completely on a wire rack. Store in an airtight container for up to 3 days.
