½ tsp Cinnamon ground
⅛ tsp Salt

1 Large eggs room temperature
1 tsp Vanilla extract

Combine dry ingredients

In a medium bowl, mix the oats, flour, baking powder, cinnamon, and salt together to combine.

Combine wet ingredients

In a separate medium sized bowl, lightly whisk the coconut oil, egg and vanilla extract together.

Add honey

Slowly stir in the honey until well combined.

Add the dry ingredients and slowly stir until just combined. Do not overmix.

Add raspberries

Fold the raspberries into the dough.

Refrigerate

Place dough bowl in the refrigerator to chill for at least 30 minutes. If chilling longer, tightly cover dough with plastic wrap, ensuring it covers the entire surface of the dough ball.

Preheat oven and prepare baking sheet

Preheat the oven to 325 °F and line a baking sheet with parchment paper.

Make cookies

Spoon the cookie dough into 15 rounded balls on the baking sheet. If refrigerated for longer than 1 and a half hours then flatten down slightly.

Bake

Bake in preheated oven for 13-15 minutes.

Remove from oven and cool on baking sheet for 15 minutes before cooling completely on a wire rack. Enjoy cooled!
