The words healthy and cookies don’t always go together, but these Healthy Oatmeal Cherry Cookies genuinely live up to their title! They contain less butter and sugar because I substitute with applesauce and I use a combination of oats and wholemeal flour instead of using refined white flour. 

To make a batch of these healthy cookies, start by whisking oats, flour, baking soda, cinnamon, and salt together. Use a hand mixer to cream together butter and sugar until light and fluffy and mix in egg, vanilla, and applesauce until combined. Add the flour mixture to the wet ingredients until just combined. Fold in dried cherries and chocolate and scoop balls of dough onto the prepared baking sheet, 2 inches apart. Press them down to flatten slightly before topping with more chocolate. Bake for about 12 minutes until golden around the edges.

Steps to make Healthy Oatmeal Cherry Cookies

Heat oven and line baking sheet

Preheat the oven to 350 °F. Line a large baking sheet with parchment paper.

Combine dry ingredients

In a medium bowl, mix 1 cup of quick-cooking oats, ½ cup of old-fashioned oats,
¼ cup of whole-wheat flour, ¾ teaspoon of baking soda, 1 teaspoon of ground cinnamon and ½ a teaspoon of kosher salt together.

Cream butter and sugar

Cream ¼ cup of butter and ⅓ cup of granulated sugar together using a handheld mixer until light and fluffy.

Add egg, vanilla and applesauce

Add 1 large egg, 1 teaspoon of vanilla and ½ cup of applesauce and beat into the creamed mixture until combined.

Combine wet and dry ingredients

Mix the flour mixture with the wet ingredients until just combined. Fold in ½ a cup of dried cherries and ⅓ cup of chopped dark chocolate.

Place cookies on baking sheet

Using a large ice cream scoop, drop balls of dough onto the prepared baking sheet, leaving 2 inches between each one. Gently press each ball down slightly to flatten.

Top with chocolate

Sprinkle the remaining chocolate on top of the cookies.

Bake

Bake in the oven for about 12 minutes until the cookies are golden around the edges.

Serve as an afternoon or mid-morning snack!
