In a large mixing bowl, combine the olive oil, salt, sugar, dried basil, oregano and rosemary.
Add the tomatoes and gently toss to coat, evenly.
Place the tomatoes neatly on the racks of the dehydrator, sliced side up. Leave enough space between each tomato for air to circulate.
Cook the tomatoes overnight for about 12 hours until dried and wrinkled.
Preheat oven to 200 °F. Just like step 2, place the tomatoes, cut side up, evenly, on a baking sheet.
Place a few freshly cut herbs at the bottom of each jar and layer the dried tomatoes until the jar is almost full. Fill with olive oil and a few sprigs of herbs on top. Repeat with remaining sundried tomatoes.
